Kiribath also known as milk rice is a traditional sri Lankan food. Commonly, it is served for breakfast. It can be also seen as a rice pudding.
Kiribath(milk rice) is served in every auspicious moments in sri Lanka. Just like for a new year, every 1st day of a month and any happy moments throughout lifetime.
By the way, why is it called as milk rice?
It is because this traditional rice is cooked with coconut milk.
Also, it is simple and easy to prepare.
It may take approximately 15 minutes for this easy recipe.
You will need,
White rice 250g
2 cups of water
1 cup of coconut milk
1 teaspoon salt
Clean and wash the rice
Add 2 cups of water and start to cook.
Keep First 2 minutes in high flame and then cook in medium flame
Do you know? New rice can be easily cooked but in the contrary old rice may take a little time. It depends on the type of raw rice you choose.
Take some of the cooked rice and check whether it's well boiled. If it's not, dont add milk yet or if it is, it's time to add the milk.
Add 1 teaspoon of salt to a cup of coconut milk.
This is the step where you must add to get taste of milk rice.
If adequate amount of salt is added properly to the coconut milk, there we get the proper taste in the rice.
Once the coconut milk is added to the cooked rice, the consistency of it should look just like porridge.
Keep on stiring.
After 7-10 minutes, take it down from the stove. You will see the rice getting thick and hardened. (not too hard, it must be sticky)
Dont worry about the stickyness. It will gradually get hardened once its cooldown.
Level it on a tray.
Cut into box shape and leave it cooldown
Remove the boxes you cut with a help of spatula or a knife. Arrange it on a plate.
Try making this traditional milk rice. It is easy, simple and delicious. You can even serve it on the other day by refrigerating it.
This goes well with a side dish known as lunu miris.
Lunu miris means a sinhala word. Lunu means salt and miris means chillie.
The recipe for lunu miris will be on the next update.
Many says that they also prefer it with sugar. That's a Good combination. I too personally prefer that way.
